C&J Mexically Special

Favorite recipe from my mom, Claire

Serves:4
Ingredients:
1 lb ground hamburger - cooked and drained
1 can refried beans (15 oz)
1/2 tsp. chili powder
1 can corn (12 oz) drained
1 can sliced ripe olives
1 can tomato sauce (8 oz)

cheddar cheese or Jack cheese shredded
dipping chips
(optional) salsa

Mix all of the top ingredients together and hear, stirring until bubbly. Add 1 cup Jack (shredded) or cheddar cheese. Top with additional shredded cheese.

Eat like nachos dipping chips into the mixture.

  1. When I doubled this recipe recently I used a can of black beans instead of a second one of refried beans and liked it a lot this way. The hamburger was 1/-1/2 pounds instead of two and I used the Mexican blend of cheese. That's why this recipe is great -- you can adapt it to what you like and what's on hand. By the way, it's from Sunset Magazine -- C & J's Mexicali Special -- I wish I could say it was mine.

  2. This recipe was from Sunset Magazine -- C & J's Mexicali Special -- wish it was mine. I doubled it the other night using 1-1/2 # hamburger and a can of black beans instead of a second of refried beans. Really liked it this way. Another generation of nachos fans has been born. Yummo!
